Bolognese and Veggie Bowl – 270 Calories

I’m a huge fan of veggie bowls, they‘re filling, nutritious and low calorie. The key is combining flavours of your favourite foods and seasoning it to perfection. This is my favourite way of doing it but I would still swap out veggies and or proteins and toppings, so really play with this recipe to find your perfect combination.

For this particular recipe I’ve used my lotato mash and beef bolognese recipes which has been pre-cooked and was ready for me to combine into this delicious meal.

The entire bowl only has 270 calories! How amazing is that?! It‘s packed full of nutrition and is so filling!

Ingredients:

150g butternut and pumpkin (baked in air fryer from frozen for 20 mins on 240C, sprinkle on stevia and cinnamon for amazing flavour)

200g courgette (chopped and cooked in the microwave for 4 minutes on high)

200g lotato mash (pre-cooked)

100g beef bolognese (pre-cooked)


Toppings:

50g Old El Paso Salsa

Fresh Basil, torn

Salt and pepper to taste
