Dairy-Free, Gluten-Free, Under 300 Cals

My usual serving size is 200g, which is 88 calories.

It's pretty amazing to think you can have carbs coming in with such low calories right? Well, it's possible and it's delicious! This has become a staple for me as it's filling and you can add it with absolutely anything.

But how can you make a potato so low calorie? You need the right potato! Here in New Zealand we found new potatoes brought to market called Lotatoes, with only 47 calories for every 100 grams, incredible!

To make this mash you'll need:

1 Kg Lotatoes, skin peeled and cut into cubes

225g Unsweetened Almond Milk

Salt and Pepper to taste

Add your peeled and cut lotatoes to a pot and cover with water, on medium heat bring to the boil and then turn heat to low and simmer for 30/40 mins or until they are very soft.

Transfer to a big bowl and add your unsweetened almond milk.

Season with salt and pepper and mash until there are no more chunks and you have your desired consistency.

Please remember, you need to weigh your food and calculate your own calories for each batch if you want to be completely accurate!

Here's how to weigh your food accurately...

Once potatoes are peeled, weigh them and write that number down.

in lotatoes there are 47 calories per 100 grams, so to make it easy you'll use a factor of .47 and multiply that by your raw potato weight.

So for 1Kg it will be .47 x 1,000 = 470 calories.

Plus the almond milk which has 16 calories per 100ml.

We used 225g almond milk, so that will be .16 x 225g = 36 calories.

1 kg of lotatoes = 470 calories,

225g almond milk = 36 calories,

total calories = 506.

Once you've cooked and mashed everything together, weigh the whole batch again, mine come out to 1,169grams, now you'll take the total calories you calculated before and divide that by the total cooked weight.

506 calories divided by 1,169 grams = .44.

This is now your factor, so if you weigh a serving size of 200g of mash, just multiply that by your factor of .44. Which will be 88, so there's 88 calories per 200g mash.

If you weigh 260g mash, multiply that by .44... 260g x .44 = 114 calories for a 260g serve.
